Cookies 'n Cream Cake Pops

I love baking, but one of the things I love baking and
making the most are cake pops! My
Cookies ‘n Cream Cake Pops have to be the most popular kind that I make. Everyone is always asking me for the recipe,
so I thought I would share my recipe with you as well.
Ingredients
Yellow cake mix
Vegetable oil
Water
Eggs
Cream cheese icing
Oreos
Parchment paper
12 oz. candy melts
Crisco
Candy sticks
Step 1: Bake the yellow cake mix as directed on the
box in a 9x13 pan. Allow the cake to
cool.
Step 2: Cut the brown edges off of the sides, top,
and bottom of the cake. (The brown edges
are two hard to make great tasting cake pops.)
As you cut the brown edges off, crumble the rest of the cake into a
separate bowl.
Step 3: Stir in about half of the can of cream cheese
icing to the cake crumble. (The cake
should now be moist enough to stick together.)
Step 4: Finely crush 12-16 Oreo cookies. Stir into the cake and icing mixture. If the mixture becomes crumbly and doesn’t
appear to be holding together well when stirring, add a little more icing.
Step 5: Line a cookie sheet with parchment
paper. Roll the cake mixture into
half-dollar size balls and place on a cookie sheet. Place the cookie sheet in
the freezer for about 30 minutes, or until frozen.
Step 6: Remove the cake pop balls from the
freezer. Place the candy melts into a
microwave-safe dish. Add about 1
tablespoon of Crisco to the candy melts.
(The Crisco will make the candy melt coating thinner. Not only will the Crisco make the cake pops
easier to coat, but you won’t have a thick coating that doesn’t allow you to
enjoy the flavor of the cake pop.)
Microwave the candy melts and Crisco for 30 second intervals until the
candy melts are melted and smooth.
Step 7: Dip the end of each candy stick into the
candy melt and then insert into each cake pop ball.
Step 8: When all of
the cake pops have a stick inserted, dip each cake pop into the candy melt to
evenly coat the cake pop. (I usually
tilt my bowl to the side, swirl the cake pop through the candy melt, and then
scrape some of the candy melt off of the bottom of the cake pop so there isn’t
a huge glob on the bottom of the cake pop as it hardens.)
(optional) If you wish to add sprinkles, dip about 6-8 cake
pops and add sprinkles before the candy melt hardens. Then repeat until all of the cake pops are
coated.
